Our goal is to make the most amazing and authentic American smallgoods in Australia. We use only the highest quality ingredients, real hardwood smoke and never imported meat. 100% Australian, 100% of the time! We will always stay true to those standards.
I started this company to follow a lifelong passion for smoking and curing meats. I grew up in Canada making corned beef and pastrami with the one half of my family and stuffing and smoking sausages on the other side. Our front porch always had a smoker and a pony keg, and there was always something fermenting in the pantry, whether it was sauerkraut for pierogis or pickles for a Reuben.
When I was 15, I got a job washing dishes at the local pub and was immediately enamored with professional cooking. I spent the next 13 years working my way through the ranks in a ton of great restaurants in Vancouver and Sydney, and when I was 28, left my executive chef job and followed my dreams.
From New York style pastrami to Cajun style Andouille sausage to streaky maple bacon, we love to explore the rich charcuterie history of a land founded by immigrants from all over the world, who combined their talents to produce meats unique to Canada and the US.
