Valentines Day Breakfast

It's always tough to know what to do for Valentines Day, in all likelihood you're still getting over the holiday pies and too many rosés in the sun.
Not to worry, we've got you covered with this easy little breakfast recipe. Ok maybe it's not super simple but it's fun and if you screw it up, you just end up with a bunch of delicious streaky maple bacon, chocolate, strawberries and pancakes, so you can't go too wrong.

RECIPE
For the pancakes
2 cups GF flour
1 Tbl baking powder
3 Tbl sugar
pinch of salt
Mix to combine, then add:
2 cups almond milk
100g melted coconut oil
2 eggs
Whisk until it just comes together, heat a cast iron pan to medium-high and melt some more coconut oil in there.
Ladle the pancake mix in, about 150ml for each pancake. Cook until they start to bubble on the top, then flip em'. Once they're firm, take them out and set aside on a plate with a paper towel.
For the bacon roses
Open your pack of Challenger Smallgoods Streaky Maple Bacon and take out the bacon rashers.
Roll them up and stick a toothpick in there, just like in the YouTube video.
Bake them on a tray at 200C for 10-20 minutes, keep an eye on them.
Melt the chocolate (buy dairy free chocolate if you're intolerant, otherwise the Lindt milk chocolate works pretty well.) and dip your bacon roses in there.
Serve the whole lot with strawberries and maple syrup :)
